In the above examples, stereotypes could have been adopted instead of tagged values (ex : <<ordered>>). In addition, tagged values frequently can have a value, and therefore need a syntaxical representation. (Pete’s comment) {ordered} is not a tagged value but one of the many varied and random uses of text within {} to represent all sorts of diverse things in the metamodel. This is probably a separate issue in its own right (unrelated to profiles) – since UML has no specific notion of reserved words it seems intractable to determine, from {text} on a diagram what it represents in the metamodel..
